Meza

Typical Serbian meza!!!


Meze is a selection of small dishes served at the beginning of all large-scale meals.

In Serbia meze can include cheese, kajmak (clotted cream), smokes ham, kulen (flavoured sausage), suvo meso (dried salted smoked meat), sliced hard-boiled eggs.

Meze is served primarily at consumption of wine or rakia.

Kale rolls


500 grams of minced beef
200 grams of oil
80 grams of rice
25 leaves of kale
1 egg
1 onion
1 tablespoon of flour
ground red pepper
salt and pepper


Put in a saucepan 50 grams of oil and fry in it the chopped onion. Take it off from heat and add the washed rice, ground meat, egg, some pepper and salt to taste.


First wash kale leaves and pour over them a warm salt water and then drain the leaves.


          


On each leaf of kale place one tablespoon of meat filling. Curl leaves into small rolls as shown in the pictures below.

On the bottom of greased pan put a few leaves of kale first and than place rolls side by side. Pour water over and cook on the medium heat for half an hour.




Heat the oil in a pan and add a tablespoon of flour, little of red pepper and a little water. Pour rolls whit this browned flour.

Serve with sour cream!!!

Jaffa cake

Crust for the cake:
Whisk 5 eggs, 5 tablespoons of sugar, 10 tablespoons of ground walnuts, 2 tablespoons of flour, 2 tablespoons of oil and bake a crust at 200 degrees for 15 minutes.

Another crust make of the same ingredients. Half both crusts.

White fil:
1/2 liter of milk, 6 tablespoons of flour, 7 tablespoons of sugar, vanilla stick. Cook the cream. When cream is cool add 125 grams of margarine.

Black fil:
Cook 100 grams of sugar with half glass of water and add in it 100 grams of ground walnuts and 100 grams of chocolate. When cream is cool add 125 grams of margarine and egg.

We need 2 boxes of Jaffa and one glass of orange juice. Put Jaffa in juice to soften it.  Chocolate  part of Jaffa goes down.


Make cake in the following order:
  1. crust
  2. white fil
  3. jaffa
  4. white fil
  5. crust
  6. black fil
  7. crust
  8. white fil
  9. jaffa
  10. white fil
  11. crust
  12. black fil
  13. chocolate frosting

American pie

Make the dough of half kilograms of flour,  100 milligrams of milk, 100 mg of oil, yeast, one egg, one teaspoon salt and one teaspoon of sugar.
Leave the dough to rise one hour.

Fill: fry onions and add 300 grams of minced meat in it and salt and pepper. Cool it and add 2 tablespoons of cream and one egg.



Divide the dough into two parts.
Stretch  the first part of the dough in oiled pan and put the meat mixture over as shown below.


Stretch the second part of dough and put over the meat mixture.


Leave it to rises for an hour and bake the pie in the oven at 220 degrees for 35 min.


Serve with yogurt.
